In The Past Nowadays Cuisine Characteristics The Influence of Algiers the Capital Famous Dishes Photos of Dishes and Bread Many families before and after Algeria Independence emigrated to Algiers, the capital of Algeria. They learnt new ways to cook dishes. So when they took short visits to Ouled Djellal, they brought with them these new recipe dishes such as dolma, kebbab, sfiria,dolma. All these dishes are white meaning not red ( not having red spices).
